I used as a title quote from my favourite motivational song / speech… I won the most of good things in my life following this rule. I won my husband πŸ˜‰ as i invited him for a prom two months later after we met and haven’t spoken at all 😊.

I’ve got my son where my pregnancy was difficult, I was 19. I finished it technician course being a young mum; started my own business.

Investing in business despite having no money, closing business due to poor health… Going abroad alone to earn money and take it back to Poland… Staying in the UK and taking my family with me, renting a flat and buying a car a few months after…

There are many things which I can be proud about. At least they are a good reason for me. I fight my demons, my body and my mind.. going forward I’m not planning to stop.

This week after a month of thinking I went to gym… Just for a walk around but I finally decided to go and face my fears… I’m fat, not overweight, just fat… And I need to do something about it because I’m the only person who can do something about it so I’m doing. I’m afraid. Not gonna lie, Monday is my test hour and I’ll need to face my demons. Wish me luck guys!

Low carb keto I’m going back

After a long hesitation I have finally come back to my diet.. why I say mine?

Just because it was worked miracles with me. I was full of energy, happy, lost weight and never ever hungry.

Lack of time and stressful job has done a lot bad to me and my body. I have to literally start all over.

I have been on low carb diet for almost a year, and you would think after that long time it’s easy to come back… It’s not. Like always, to change something, there is a need for s few factors to go together, willingness to change, commitment, positive attitude and time.

Cauliflower pancakes on mushroom sauce

Finally, I have changed my job and it was a blessing. I’ve got enough time now to prepare and plan my meals. Also, there is shy plan for joining gym πŸ˜‰. For now, I need to concentrate on meals.

I have cooked some cauliflower, mash it. Add coconut flour, almond flour, a bit of cream, a few eggs, spices and a few spoons of psyllium husk. Form pancakes with spoon and fry on olive oil.

For sauce, which is not exactly a sauce πŸ˜‰ Melt some butter, fry onion, mushroom and some sausages together, add cream and spices… Boil until reduced and not so runny. Enjoy ☺️

Simple, quick to do and the most important, delicious πŸ˜‹

Back to square one… Jo-Jo effect

During the pandemic in 2020 everyone was gaining weight… Due to restrictions, staying at home, stress eating, being bored…

I stand up for myself and start a healthy path. No sugar, low carb, intermittent fasting, a lot of walking, basically all the best things you can do I have been doing.

During 2020 I have lost a lot, around 25kg which is almost 4 stones. Process wasn’t very easy but not difficult as well.

Only by eating healthy I’ve lost all the weight. Never been hungry and always happy.

Sound good, isn’t it?

Yes, it’s not too good to be true but felling out of the diet was unexpected and brutal.

I have been going through some stress and got one or two things I shouldn’t and here I am again. After another year I am in square one.

Today is the day I’m coming back. I’m going back to fight the battle and win it for myself. My health is way more important that eating another donut.

I’ll be sharing my process with you all. My sister is getting married soon, this is one of the reasons I want to be healthy and slimmer as well.

Today, I have started with zucchini noodles with sausage and cheesy sauce.

A farm in UK – my dream

Since I was little I was in love with a farm life, freedom and responsibilities. I was born in Poland and first 19 years of my life I spent on farm, helping my family to grow vegetables, fruits, care about animals, cook food and work on a field.

Collecting eggs, milking a cow or picking mushrooms, this was something I was doing on daily basis. Really enjoying this type of life.

I have moved to UK with my family in 2014, to start from fresh. I started to climb on the career ladder, hard from beginning, long way but finally I have reached the level I was keep trying to achieve…

I am very successful, jumped over 5 steps on the career ladder in past 3 years. I was sure, that achieving that much will make me so happy but it didn’t. I love my job, there is no doubt, but I do have a feeling in my gut that this path is not mine despite enjoying it. I always dreamt about farm life, growing, foraging and picking…

I feel inside that nature, farming, food etc is the life I would love to live. My husband is in love with this life as well. We have set up fundraising in gofundme to help us achieve our dreams.

We would like to have a farm in UK, producing eggs, veggies, fruits, plants, herbs and mushrooms. Invite people to give them farm experience.

I bake bread, cook, grow vegetables, mushrooms, herbs, picking mushrooms and herbs, already. I would like to share my experience with others. Show them how beautiful and satisfying this kind of life can be.

Pink Oysters Asian inspired stir fry Recipe

Just to make you aware, this recipe is in party size, so unless you have 10 people to feed I would strongly recommend to make smaller portion πŸ™ƒπŸ˜‰.

What to prepare?

2 table spoon sezame seeds

5 table spoons toasted sezame oil

2 cloves of garlic

1 onion

250g of chestnut mushroom

220g pink oysters

400g rice pasta

Vegan vegetable bullion pot

4 big peppers

200g asparagus tips

1/2 tea spoon salt

2 tea spoon garlic powder

5 table spoons of soy sauce

1/4 tea spoon of dried chilli

Sprinkle of chilli cayenne

Put rice pasta aside in bowl and put vegetable pot on top. Leave for now.

Take a quite big pot, put on low heat on the hob. Add oil and sesame seeds to the pot and wait until golden.

While sesame seeds are getting gold tan, chop garlic and onion.

Cut all chestnut mushrooms in four pieces and add to pot, sprinkle a bit salt.

Add pink Oysters chopped in strips. TIP: pink oysters could be very chewy, especially stem. Make sure stem is chopped very well or put this in your compost. I don’t like to waste food so I just chopped it well.

Boil 1.5 litre of water and add to prepared earlier pasta. Cover it to make sure pasta will soak in bullion.

Change heat from low to medium, add chopped bell peppers and asparagus. Add all spices. Drain pasta from bullion, add to pot with veggies and add some of the bullion to the dish. Turn off the heat after 5-10 minutes, stir occasionally to make sure food does not stick to the bottom of the pot.

How often we are forgetting ourselves? Our own health should be our priority, and following all good for us things we will be cleaner and more friendly to Earth, but not only; to our friends, family, children, workmates etc.
